Sausage, Egg, & Cheese Stuffed Bagels
Homemade bagels stuffed with a classic breakfast filling of American cheese, mozzarella, vegan sausage, and scrambled eggs.
Ingredients
- 4 cups Bread Flour
- 1 tbsp Yeast (dry active)
- 1 tbsp White Sugar
- 1 tsp Table Salt
- 8 oz Vegan Sausage (chopped and cooked)
- 7 Chicken Egg (6 scrambled for filling; 1 for egg wash)
- 8 American Cheese (slices)
- 1 cup Mozzarella (shredded)
- ¼ cup Brown Sugar (for boiling water)
- 1 tbsp Baking Soda (for boiling water)
- ¼ cup Everything Bagel Seasoning

In a stand mixer, combine warm water, sugar, and yeast. Let it sit for about 10 minutes until foamy.

Add bread flour and salt to the yeast mixture. Use a dough hook to knead until a smooth, elastic dough forms.

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm spot for about 1 hour.

While dough rises, cook the filling: sauté the chopped vegan sausage until browned and scramble 6 eggs.

Divide the risen dough into 8 equal pieces and roll them into balls.

Roll out each dough ball into a flat oval shape. Layer with a slice of American cheese, a sprinkle of mozzarella, sausage, and eggs.

Fold the dough over the filling and pinch the edges tightly to seal into a log, then join the ends to create a bagel ring.

Bring a large pot of water to a boil and add the brown sugar and baking soda.

Boil the stuffed bagels for about 1 minute per side, then transfer to a wire rack to drain briefly.

Place bagels on a baking sheet. Brush with egg wash (1 egg beaten with a splash of water) and sprinkle generously with everything bagel seasoning.
