Peanut Butter & Jelly Rice Crispy Treats
A delicious twist on the classic treat, these layered rice crispy bars feature smooth peanut butter and sweet raspberry jelly for a nostalgic PB&J sandwich flavor profile.
Ingredients
- 5 tbsp Butter (salted; 3 tbsp for peanut butter mixture, 2 tbsp for jelly mixture)
- 5 cups Mini Marshmallows (3 cups for peanut butter mixture, 2 cups for jelly mixture)
- ½ cup Peanut Butter (smooth)
- 6 tbsp Sweetened Condensed Milk (1/4 cup for peanut butter mixture, 2 tbsp for jelly mixture)
- 6 cups Crispy Rice Cereal (4 cups for peanut butter mixture, 2 cups for jelly mixture)
- ⅓ cup Raspberry Jelly
- 1 Sea Salt (flakey; for garnish)

Lightly grease and line a 9x9-inch pan with parchment paper and set aside.

Prepare the peanut butter mixture: Melt 3 tablespoons of butter in a medium pot over medium heat. Add 3 cups of mini marshmallows and stir until completely melted.

Lower the heat and mix in the smooth peanut butter and 1/4 cup of sweetened condensed milk until the mixture is smooth. Remove from the heat and fold in 4 cups of crispy rice cereal.

Prepare the jelly mixture: Melt 2 tablespoons of butter in another medium pot over medium heat. Add 2 cups of mini marshmallows and stir until melted.

Mix in the raspberry jelly and 2 tablespoons of sweetened condensed milk until fully combined. Fold in 2 cups of crispy rice cereal.

Assemble the layers: Press half of the peanut butter mixture firmly into the bottom of the prepared pan.

Press the entire jelly mixture evenly over the first peanut butter layer.

Press the remaining peanut butter mixture over the jelly layer to finish the sandwich. Garnish the top with flakey sea salt.
