Peanut Butter & Jelly Date Bark

A viral, healthy-ish treat that tastes like a giant peanut butter and jelly cup, made with a chewy date base and a snappy chocolate shell.

    Pit and halve the dates. Arrange them in a single layer on a large sheet of parchment paper, overlapping slightly to form a solid rectangular base.

    Place another sheet of parchment paper over the dates and use a rolling pin to firmly press and flatten them until they are joined together.

    Remove the top parchment paper. Spread the peanut butter in an even layer across the flattened dates.

    Dollop the fruit jelly over the peanut butter and spread it out evenly using a spatula.

    Pour the melted chocolate over the jelly layer and spread it all the way to the edges.

    Sprinkle the top with flaky sea salt.

    Place the bark in the freezer for 1-2 hours, or until the chocolate is completely set and firm.

    Once set, cut or break the bark into rectangular pieces or shards.
