Spicy Overnight Pickles

Ingredients
- 3 Cucumber
- 1 Red Onion (optional)
- 1 Jalapeño (optional)
- 3 cups White Distilled Vinegar
- 4 tbsp White Sugar
- 2 tbsp Table Salt
- 6 Garlic (cloves)
- ½ tsp Red Pepper Flakes
- ½ tsp Black Pepper (ground)
- 2 Dill (fresh; divided for 2 jars)

Chop the cucumbers into rounds.

Optionally, chop the onion and jalapeño.

Pack the sliced cucumbers, onion, and jalapeño tightly into two jars.

In a pot, combine vinegar, sugar, salt, garlic cloves, red pepper flakes, and ground black pepper.

Bring the mixture to a boil and remove from heat immediately once it reaches a boil.

Pour the mixture evenly between the two jars.

Once cooled, add fresh dill to each jar and shake well.
