    Dice the bacon and cook in a pot until crispy. Remove most of the bacon, leaving some fat in the pot.

    Add diced onion and celery to the bacon fat and cook until softened.

    Whisk in the milk and chicken broth.

    Season with paprika and freshly ground pepper.

    Add the cubed potatoes and simmer until tender.

    Stir in shredded cheddar cheese and cooked bacon.

    Ladle into a bowl and garnish with a dollop of sour cream, additional cheddar, bacon, and thinly sliced green onions. Serve with toasted baguette.
