Spaghetti all’Assassina

- 4 cups Water
- ¼ cup Tomato Paste
- 4 Garlic
- 1 Kosher Salt
- 1 Black Pepper
- ¼ cup Olive Oil
- 2 tbsp Calabrian Chili Paste
- 1 cup Tomato Passata
- 1 Parmesan

Prepare the tomato broth: In a saucepan, whisk together water, tomato paste, 2 whole garlic cloves, salt, and pepper. Bring to a simmer.

In a separate large pan, heat the olive oil. Add the minced garlic and Calabrian chili paste, cooking until fragrant.

Add the tomato passata to the large pan and cook down.

Add the raw spaghetti to the large pan, layering it in the tomato mixture.

Begin adding the warm tomato broth to the pan a ladle at a time, allowing the liquid to be absorbed and the bottom of the pasta to fry and 'burn' slightly, flipping as needed until the pasta is cooked and crispy.

Serve the spaghetti topped with grated Parmesan cheese.
