Mini Tomato Tatins

Ingredients
- 1 tbsp Olive Oil
- 1 tbsp Balsamic Vinegar
- 1 tbsp Honey
- 1 Basil
- 1 tbsp Herbes de Provence
- 10 Tomato (cherry; sliced in half)
- 1 Table Salt (to taste)
- 2 tbsp Parmesan (grated)
- 1 Puff Pastry Dough
- 1 Chicken Egg (yolk only; beaten)
- 2 tbsp Feta Cheese (crumbled)
- 1 Mint (fresh; chopped)

In a small bowl, mix olive oil, balsamic vinegar, honey, basil, and herbes de Provence.

Place spoonfuls of the mixture onto a parchment-lined baking tray to form small circles.

Arrange halved cherry tomatoes cut-side down in each circle.

Sprinkle with salt and grated Parmesan cheese.

Cut the puff pastry into pieces large enough to cover the tomato circles and place them on top, tucking the edges in.

Brush the pastry with beaten egg yolk.

Bake in a preheated oven at 180°C for 20 minutes.
