Smashed Cucumber Watermelon Salad
A refreshing and vibrant summer salad featuring smashed cucumbers and watermelon, tossed with salty feta, fresh mint, and a zesty Calabrian chili dressing.
Ingredients
- 2 Cucumber (English; smashed and cut into irregular shapes)
- ½ Watermelon (small; smashed and cut into irregular shapes)
- ¼ lb Feta Cheese (crumbled)
- ¼ cup Mint (fresh leaves; chopped)
- 2 Lime (juice and zest)
- 2 tbsp Olive Oil (extra virgin)
- 2 tsp Calabrian Chili Paste
- 1 Sea Salt (flaky; to taste)
- 1 Black Pepper (to taste)
Instructions

Smash the English cucumbers with a wooden mallet or rolling pin to break them open, then cut into irregular, bite-sized chunks.

Using the same method, smash the half-watermelon and cut it into irregular pieces.

In a large mixing bowl, combine the prepared cucumber and watermelon pieces.

Add the crumbled feta cheese and chopped mint leaves to the bowl.

In a separate small bowl or glass, prepare the dressing by whisking together the lime zest, lime juice, extra virgin olive oil, Calabrian chili paste, flaky salt, and black pepper.
