Confit Egg Yolks
Perfectly jammy and rich egg yolks slow-cooked in olive oil, served simply on toast.

Ingredients
- 12 Chicken Egg (yolks only)
- 2 cups Olive Oil (enough to submerge yolks)
- 1 Sliced Bread (toasted; per serving)
- 1 Parmesan (grated, to taste)
- 1 Black Pepper (freshly ground, to taste)
Instructions

Carefully separate the egg yolks from the whites, ensuring the yolks remain intact.

Add olive oil to a baking pan until the bottom is well-covered, then gently place the egg yolks into the oil.

Cover the baking pan tightly with aluminum foil.

Bake in a preheated oven at 180°F (82°C) for 45 to 55 minutes, or until the yolks reach a jammy consistency.

Gently lift the yolks out of the oil and serve on a slice of toasted bread.

Garnish with grated parmesan cheese and freshly ground black pepper.
