Sambal Dabu-Dabu Khas Manado
A fresh and spicy Indonesian condiment from Manado, North Sulawesi, made with raw sliced shallots, chilies, and tomatoes, finished with a splash of hot oil and lime juice.
Ingredients
- 8 Shallot (thinly sliced)
- 10 Bird's Eye Chili (thinly sliced)
- 1 Tomato (red; diced)
- 1 Green Tomato (diced)
- 1 Table Salt (to taste)
- 1 Calamansi (juiced)
- 3 tbsp Vegetable Oil (smoking hot; preferably used for frying fish)
Instructions

Thinly slice the shallots and place them in a mixing bowl.

Thinly slice all the bird's eye chilies and add them to the bowl with the shallots.

Dice the red tomato and green tomato into small cubes, then add them to the bowl.

Add salt to the mixture and stir while lightly pressing the ingredients with a spoon to help release their natural juices.

Squeeze the juice of one calamansi lime over the mixture and stir until evenly combined.

Pour in the smoking hot vegetable oil (using oil that has been used to fry fish is recommended for better flavor) and stir well before serving.
