Ikan Bakar Sambal Kecap
A delicious and smoky grilled fish dish cooked in banana leaves, served with a tangy sweet soy dipping sauce.
Ingredients
- 2 Gurame Fish (scored)
- 1 Banana Leaf (for wrapping)
- 1 tbsp Vegetable Oil (for frying)
- 1 Salt (to taste)
- 1 tbsp Sweet Soy Sauce (kecap manis)
- ½ tbsp Sugar (white granulated sugar)
- ½ Desaku Marinade (sachet)
- 2 tsp Black Pepper (powder)
- 2 tsp Garlic Powder (powder)
- 1 Ginger (grated)
- 1 tbsp Chili Sauce
- 1 Red Chili (sliced)
- 1 Shallot (sliced)
Instructions

Score the surface of the gurame fish on both sides.

Rub the fish with salt.

Wrap the fish in banana leaves and fry in hot oil just until partially cooked. Remove and set aside.

In a bowl, mix together sweet soy sauce, sugar, Desaku marinade, black pepper powder, garlic powder, grated ginger, and chili sauce to make the basting sauce.

Place the partially fried fish on a banana leaf in a pan. Brush the fish generously with the basting sauce.

Prepare the dipping sambal by mixing sliced red chili, sliced shallots, and sweet soy sauce in a small bowl.

Cook the fish over low heat on the pan until fully cooked and fragrant, then serve with the prepared dipping sambal.
