Instructions

  1. 1

Prepare the bananas by peeling them and slicing each into 4 thin connected slices to form a fan shape. To make them 'jumbo', you can add two additional slices from another banana and press them together at the base.

  2. 2

In a large mixing bowl, combine the all-purpose flour, cornstarch, sugar, salt, and vanilla powder.

  3. 3

Gradually pour in 250 ml of ice water while whisking constantly until the batter is smooth and free of lumps.

  4. 4

Add the melted margarine into the batter and whisk until well combined. The consistency should be thick but pourable.

  5. 5

Take about 1/4 of the batter and place it in a separate bowl. Add the remaining 30 ml of ice water to this portion to make a thinner 'kremes' batter. Transfer this thin batter into a squeeze bottle for easier application.

  6. 6

Dip each fan-shaped banana into the thick main batter, ensuring it is fully and evenly coated.

  7. 7

Heat a generous amount of vegetable oil in a pan over medium heat. Carefully place the battered bananas into the hot oil.

  8. 8

Squeeze the thin batter from the bottle into the oil around the frying bananas. Wait a few seconds for it to start crisping up, then use a wooden spoon or spatula to push and 'glue' these crispy bits (kremes) onto the surface of the bananas.

  9. 9

Repeat the splashing process with the thin batter to create more layers of crunch if desired. Splash with hot oil occasionally to ensure even crisping.

  10. 10

Flip the bananas once the coating is firm and dry. Continue frying until the bananas are a beautiful golden brown and the 'kremes' is very crunchy.

  11. 11

Drain the fried bananas on a wire rack to remove excess oil before serving.
