One Pot Egg Curry
A quick and easy one-pot curry recipe where the eggs are hard-boiled within the pressure cooker while the onion masala cooks.
Ingredients
- 1 tsp Black Pepper
- 1 tsp Fennel Seeds
- 6 Garlic
- 1 Ginger (1 inch piece)
- 2 Red Onion (sliced)
- 1 Tomato (chopped)
- ¼ tsp Turmeric (powder)
- 1 tbsp Chili Powder (Kashmiri chili powder)
- ¾ tbsp Coriander (powder)
- ¼ tsp Garam Masala (powder)
- 2 tbsp Coconut Oil
- 1 Curry Leaves
- 1 Table Salt (to taste)
- 4 Chicken Egg
- 1 cup Water (for boiling eggs)
Instructions

Using a stone mortar and pestle, crush the peppercorns and fennel seeds together.

Add the garlic cloves and ginger piece to the mortar and crush them into the spice mix.

In a pressure cooker, combine the sliced onions, chopped tomato, crushed spice and aromatics mixture, turmeric powder, Kashmiri chili powder, coriander powder, garam masala powder, salt, curry leaves, and coconut oil.

Mix everything well.

Place a metal bowl inside the pressure cooker on top of the onion mixture. Place the eggs inside the metal bowl and pour in water.

Close the pressure cooker lid and cook.

Open the lid, remove the metal bowl carefully, and peel the hard-boiled eggs.

Add the peeled hard-boiled eggs into the curry base in the pressure cooker and stir to combine.
