Copycat Taco Bell Mexican Pizza
Ingredients
- 8 Tortilla (taco size; flour)
- 1 Ground Beef
- 1 Refried Beans (canned)
- 1 Taco Seasoning (packet)
- 1 Red Enchilada Sauce (10oz. can)
- 1 Vegetable Oil (for cooking)
- 2 cups Mexican Cheese Blend (or cheddar cheese)
- 1 Tomato (chopped, for topping)
- 1 Scallion (chopped, green onions, for topping)
Instructions

Heat some vegetable oil in a skillet over medium heat, and toast the tortillas evenly on both sides until crispy.

Place 4 of the tortillas on a parchment lined or well greased baking sheet.

Top each of the 4 tortillas with the refried beans.

Brown the ground beef in a skillet over medium high heat until completely cooked through. Drain the excess grease.

Sprinkle the taco seasoning over the ground beef, and stir to combine well.

Spread a layer of the meat over the refried beans on the tortillas.

Place another crispy tortilla on top of each of the topped ones.

Spread a layer of enchilada sauce on top of each Mexican pizza, and top each pizza with a the cheese.

Bake for 10 minutes, or until the cheese has melted.

Remove, and top with the tomatoes and green onions before serving.
